Spotlight on Jack Henderson: 2013 Sustainability Award Winner
Jack Henderson, Associate Director of Nutrition and Food Services (NFS), UCSF Medical Center, was honored with a 2013 Sustainability Award for his efforts to promote sustainable food procurement and zero waste within UC and nationally.
After 22 years, Jack is retiring. Congratulations Jack: for both winning a Sustainability Award and for your recent retirement. He will be greatly missed, but the impact of his work will live on. Click here to read about many of the medical center’s sustainable food accomplishments.
Before Jack retired, we had the opportunity to ask him a few questions about sustainability:
1. What does sustainability mean to you?
I view sustainability as the capacity for humans to maintain living standards in a way that ensures that future generations will be able to do the same. We need to take better care of our planet so that our children, and their children will have an environment that is beneficial and not hostile to their growth and development
1. Why do you think sustainability is important for UCSF?
As a world-renowned medical center, it is important for us to set an example to other institutions and for us to show how we can be more sustainable without jeopardizing the core business of the hospital.
What accomplishment are you most proud of around promoting LiveGreen at UCSF?
I have been privileged to work with a team of passionate individuals who have the zest and the spark to carry through in practice what we set out to do on paper. By exceeding the UCOP goal of 20% sustainable food purchases by 2020 seven years ahead of schedule is a testimony to the work the team has done. We have much to be proud of.
What is one action you would like to see your fellow staff/students take?
It’s simple, walk the walk in as many ways as you can. Time is running out so take this seriously.
How do you personally live and work sustainably? At home, we installed solar panels, we drive a hybrid, we bought new bicycles, we compost and recycle like maniacs, we have our water heater on low, laundry is done with cold water, we dry our clothes “analog” on a rack, we turn lights off when not in use, minimize heater use, and we buy local, and organic, when feasible and always go to the Alemany Farmers Market on Saturdays.
